I've done some googling and it looks like this colour form is found in captive bred birds - could it also occur as a mutation in the wild? The bird has been feeding in a garden with wild lorikeets, rosellas and pigeons.

Definitely an escapee. This colour mutation does not occur in the wild (to the best of my knowledge), and Red-rumps are rarely recorded from the Jervis Bay area in the first place.
